Ingredients:
2 cups sweet corn, 1 cup mixed vegetables, 1 onion, 3 garlic cloves, 4 cups vegetable broth, 1 tsp salt, 1/2 tsp pepper, 2 tbsp olive oil.
Chop onion:
Cut 1 onion into small pieces.
Mince garlic:
Crush 3 garlic cloves.
Chop vegetables:
Cut 1 cup of mixed vegetables into small pieces.
Heat oil:
Warm 2 tablespoons of olive oil in a large pot.
Cook onions and garlic:
Add onion and garlic to the pot, cook until soft.
Add vegetables:
Add mixed vegetables to the pot, cook for a few minutes.
Add corn and broth:
Add 2 cups of sweet corn and 4 cups of vegetable broth, bring to boil.
Simmer:
Reduce heat, let soup cook for 20-25 minutes until vegetables are tender.
Season and serve:
Add 1 teaspoon salt and 1/2 teaspoon pepper, stir, and serve hot.
