Gather Ingredients: You need cumin seeds, coriander seeds, cardamom pods, cloves, black peppercorns, cinnamon sticks, and bay leaves.

Measure Spices: Use 2 tablespoons each of cumin and coriander seeds, 1 tablespoon of black peppercorns, and 1 teaspoon each of cardamom pods, cloves, and crushed cinnamon sticks. Add 2 bay leaves.

Toast Spices: Heat a pan on medium heat and add the spices. Toast them for 2-3 minutes until they smell fragrant.

 Cool Spices: Remove the spices from the pan and let them cool completely.

Grind Spices: Use a spice grinder or blender to grind the cooled spices into a fine powder.

Store in Jar: Put the garam masala powder in an airtight jar to keep it fresh.

 Label and Date: Write the date on the jar so you know when you made it. Garam masala stays fresh for up to 6 months.

Use in Cooking: Add garam masala to curries, soups, and other dishes for extra flavor. Start with a small amount and add more as needed.
