Melbourne has once again proved that it is the coffee capital of the world. Local barista Jack Simpson, who works as the Head of Innovation at Axil Coffee Roasters, has won the 2025 World Barista Championship held in Milan, Italy. The event brought together the best coffee makers from across the globe, and Simpson’s victory has made Australia proud.

Earlier this year, Simpson won the Australian Barista Championship for the third time in a row. This win earned him a chance to compete internationally at the 25th anniversary of the World Barista Championship. The competition lasted five days, with talented baristas from 50 countries including Greece, Vietnam, Costa Rica, and Kenya. Each participant had to create perfect coffee drinks under strict judging standards.

The competition focused on three categories espresso, milk-based drinks, and specialty creations. Every barista was given 15 minutes to prepare four cups of each type. They were judged on their taste, technical skills, presentation, and storytelling. Jack Simpson impressed the judges with his signature creation, which used two special coffees from Panama and Colombia. He added housemade honey vinegar and passionfruit husk distillate to create a fizzy, refreshing drink with flavors of raspberry kombucha and mango.

Speaking about his big win, Simpson said, “It’s an incredible honor to bring the World Barista Championship title home to Australia.” He also thanked his team, saying that this achievement celebrates the hard work of the coffee producers, roasters, and the Axil Coffee family who supported him throughout his journey. His win followed two earlier achievements finishing second in 2024 and third in 2023 showing his steady rise to the top.

Jack Simpson’s victory also adds to Axil Coffee Roasters’ impressive record. The company now holds seven Australian titles, the most of any coffee business in the country. Previous champion Anthony Douglas, who won in 2021, is also part of the Axil legacy. With Simpson’s win, Melbourne once again stands tall on the global stage, showing that its passion for coffee is unmatched anywhere in the world.
